Not every entry here is going to be a bake. Some weeks the most useful thing I can do is read, and this was one of them. I have been working through Mary Berry's Baking Bible with a pencil, which is a strange way to read a cookbook, and it turns out to be the right one.
Recipes are short because they assume you know things
The first thing I noticed is how little the recipes say. Cream the butter and sugar. Fold in the flour. Bake until done. When you have baked for forty years that is a complete instruction. When you have not, every one of those sentences is hiding a skill.
That is exactly what a technical challenge on the show is. A recipe with the knowledge stripped out. So the real training is not collecting recipes. It is learning what the short sentences mean.
Three things I am taking into next week
One. Temperature of ingredients matters more than I gave it credit for. Most of my dense sponges were cold butter, not bad technique.
Two. The all-in-one method is not a shortcut. It is a different method with its own rules, and it wants softer butter and a little extra raising agent.
Three. Weigh everything, including the eggs. I already do this for pizza dough and somehow never carried it over.
What I am reading next
Something on bread that is not sourdough, since week three is coming and my pizza habits are going to get me in trouble. Suggestions welcome.
